The Ruffatti family, originally from Turin, Italy, moved to El Salvador and for five generations they plant and grow coffee in their farm - FES - Finca El Salvador.
Rodolfo's farm was placed 10th in the Cup of Excellence auction program in 2015 and has gained reputation for producing clean, sweet and versatile coffees. The cherries are hand picked. They are placed directly on raised beds to be sun dried over several weeks.
Drying Natural coffees is considerably longer and the overall process is riskier than Washed coffee. Naturals take more space on drying surfaces, require more attention and labor to prevent mold and over fermentation.
This is the classic coffee of the farm - sweet, balanced, full bodied with long aftertaste.
