Despite the development and refinement of many other coffee varieties, Rodolfo Ruffatti chose to preserve his old Bourbon trees — La Borbonera.
The Lot on the farm where "La Borbonera" is located is the highest point, where coffee trees are less susceptible to diseases and pests.
The trees were originally planted during the time of Rodolfo's great-great-grandfather. However, thanks to a smart pruning technique, the Bourbon trees continue to grow and produce a significant yield.
The fact that these trees are still alive and so productive is remarkable, especially considering the average lifespan of a coffee tree is 30 years.
The cherries are handpicked and immediately transferred to raised African beds for drying.
