Timor Leste – Hibrido de Timor & Typica W

East Timor is one of the world’s youngest countries, gaining independence from Indonesia in 2002. Timor-Leste currently faces enormous economic upheaval, as its oil reserves begin to run dry. In a country whose economy is traditionally dominated by oil companies, coffee is a growing sector, aiming to be a sustainable, conscious alternative for East Timor. The organization through which we bring this coffee from is a NPO that works with complete transparency. After several years of assimilating knowledge, mechanisation and improved work methods, the coffee reached grade levels above 80+. Increasing and maintaining the quality of coffee increases the demand and the price and guarantees proper payment for the growers. Washing process takes place in 2 different stations - following 24h fermentation in the higher station where the humidity is high, the beans are dried again in the lower altitude station. These beans produces a balanced cup with moderate acidity, caramel sweetness and full body.
