Colombia – San Sebastian – Caturra & Castillo W

Colombia’s Cauca region is well known for producing some of the country’s most special coffees, and San Sebastián is a great example. The region sits high in the mountains of southwest Colombia, between the Andes and the Pacific coast. The volcanic soil, steady rainfall, and big temperature changes from day to night help the coffee cherries grow slowly, which creates extra sweetness and rich flavor.

San Sebastián comes from small farmers in the Inzá area on Cauca’s western slopes. Most farmers grow Castillo and Caturra varieties, picking the ripe cherries by hand and taking them to local wet mills. There, the washed process helps bring out the clean, bright flavors that make this coffee stand out. It’s a classic Colombian coffee.
